Apple, Carrot & Buckwheat Loaf Cake
Created for a low fat, low calcium, vegan, low glycemic index, high fibre, protein rich healing diet 💚
Ingredients:
1 cup fresh organic apple pure (skins included) + one whole apple with skin, sliced to decorate the top of the cake (this is an optional but much loved addition to the moisture of the cake)
1 cup H20 or Maple Water (contact me to purchase this blissful hydration)
2 tsp Organic vanilla pure extract
2 tsp Apple cider vinegar
2 cups Organic finely grated carrot
2 tsp grated fresh Organic lemon peel
2.5 cups of Organic Spray-free Buck wheat flour
2 tsp Organic Gluten Free Baking Powder
2 tsp Organic Baking Soda
2 tsp of mixed Cinnamon, cardamom, nutmeg, allspice
Pinch of Sea Salt
1 to 1.5 tsps Organic Monk Fruit Powder
Super easy Instructions:
Preheat oven to 175 degrees
Line two 20 x 8cm tins
Place the dry and wet ingredients in two seperate bowls and whisk ingredients in each bowl to combine.
Move the wet ingredients into the dry and mix with a fork to combine.
Place the mix evenly in the tins and decorate the top with sliced apple and spinkl with cinnamon and a little tiny extra monk fruit powder
Bake in the over for 32 minutes or until a skewer comes out clean 👨🍳
Enjoy warm and then slice the remained up to freeze for a maximum of 1 month 😋
