Apple, Carrot & Buckwheat Loaf Cake

Created for a low fat, low calcium, vegan, low glycemic index, high fibre, protein rich healing diet πŸ’š

Ingredients:

  • 1 cup fresh organic apple pure (skins included) + one whole apple with skin, sliced to decorate the top of the cake (this is an optional but much loved addition to the moisture of the cake)

  • 1 cup H20 or Maple Water (contact me to purchase this blissful hydration)

  • 2 tsp Organic vanilla pure extract

  • 2 tsp Apple cider vinegar

  • 2 cups Organic finely grated carrot

  • 2 tsp grated fresh Organic lemon peel

  • 2.5 cups of Organic Spray-free Buck wheat flour

  • 2 tsp Organic Gluten Free Baking Powder

  • 2 tsp Organic Baking Soda

  • 2 tsp of mixed Cinnamon, cardamom, nutmeg, allspice

  • Pinch of Sea Salt

  • 1 to 1.5 tsps Organic Monk Fruit Powder

Super easy Instructions:

  1. Preheat oven to 175 degrees

  2. Line two 20 x 8cm tins

  3. Place the dry and wet ingredients in two seperate bowls and whisk ingredients in each bowl to combine.

  4. Move the wet ingredients into the dry and mix with a fork to combine.

  5. Place the mix evenly in the tins and decorate the top with sliced apple and spinkl with cinnamon and a little tiny extra monk fruit powder

  6. Bake in the over for 32 minutes or until a skewer comes out clean πŸ‘¨β€πŸ³

Enjoy warm and then slice the remained up to freeze for a maximum of 1 month πŸ˜‹
