Choc Protein Muffins
Vegan-friendly recipe is oil-free, rich in flavour, high fiber, protein-packed and delicious, but you do you and substitutions are suggested and welcomed.
Ingredient:
1 cup buckwheat flour
½ cup organic cacao powder or organic carob
¼ cup Body Fuel Vanilla Pea protein powder (can substitute with hemp or Vanilla Whey Protein powder)
1 tsp Organic baking powder
¼ tsp Organic baking soda
Pinch salt
3 ripe mashed organic bananas
2 tbsp Organic Maple Syrup
¾ cup Water or Oat mylk
Handful Organic Cacao Nibs (Omit if using Carob)
Method:
Preheat oven to 180 Celsius
In a large mixing bowl, sift the buckwheat flour, cacao powder, vegan protein powder, baking powder, baking soda, and salt. Stir all ingredients together .
In a separate mixing bowl, mash 3 bananas with a fork, add maple syrup, mylk, and mix till combined .
Add the wet ingredients to the dry and thoroughly mix together .
Add the cacao nibs if using and stir through.
Line a tray with cupcake holders and add roughly one heaped tbsp per cupcake.
Bake in the oven for around 20 minutes or till cooked through. Transfer to a cooling rack, allow to cool, and enjoy 🧁
